
Miso Spinach and Leek Soup

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, crushed
- 2 leeks
- 1 sweet potato, cubed
- 500ml vegetable stock
- 250ml cashew milk
- 1/2 tsp cayenne pepper
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- juice of 1/2 lemon
- 1 tsp miso
- 250g spinach
How To
- In a medium sized pot, heat the olive oil before adding the chopped onion.
- After 10 minutes, when the onion is translucent, add the crushed garlic and chopped leeks.
- After five minutes add the sweet potato, stock, cashew milk, cayenne pepper, cumin and coriander.
- Bring to the boil then simmer with the lid on for 15 minutes, or until the sweet potato is soft.
- Add the lemon, miso and spinach and simmer for a further two minutes before taking off the heat.
- Blend until smooth.
